Perfect Patriotic Dessert For an After-Election Celebration

Looking for a way to celebrate the new presidency? Try this delicious apple pie recipe with included flaky crust directions. What could be more American?

Election Day brought an unforgettable moment in the United States: the voting in of the first African American to the presidential seat. Approximately 14 million more voters came out to cast their ballots (perhaps for the first time in their lives) and our country showed that we are interested in economic and social change. Let's celebrate!

Gather your loved ones around to commemorate this historical election as you feast on a home-baked apple pie with a flaky, light crust. Top with whipped cream if you desire, or plop a scoop of ice cream on the side. Whether you voted for Barack Obama and Joe Biden or John McCain and Sarah Palin, you'll be satisfied.

Flaky Pie Crust Recipe

Ingredients (enough to make six 9-inch crusts)

  • 1 beaten egg
  • 5 cups of flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon brown sugar
  • 1/2 tablespoon of salt
  • 2 cups of shortening
  • 1 tablespoon of vinegar
  • water

What to do:

  1. Thoroughly mix dry ingredients. Cut in shortening until the mixture has a crumbly texture.
  2. In a measuring cup, combine an egg and the vinegar and enough water to make 1 cup.
  3. Combine the dry and liquid ingredients, making sure to not overmix. When the mixture easily forms a ball, it's just right.
  4. Divide the dough into six equally-sized smaller balls. On a floured piece of waxed paper, place a ball and shape it into a disc. With another floured piece of waxed paper on top of this, roll the disc out into a flat circle.
  5. Remove paper and place in a 9-inch pie pan. Make and put aside another crust for the top.
  6. Roll out extra dough and store unused portions individually in the freezer (try using large ziplock bags.)

Victory Apple Pie

Ingredients

  • 2 pie crusts
  • 1 tablespoon of cornstarch
  • 1/2 teaspoon of salt
  • 7 Granny Smith apples (peeled and cut into pieces or wedges)
  • 3 tablespoons of melted butter
  • 3 tablespoons of sugar
  • 1/3 cup of light corn syrup
  • 3 tablespoons of light corn syrup
  • 1 teaspoon of ground cinnamon
  • 1/2 cup of light brown sugar
  • 2 tablespoons of butter, softened
  • 2 tablespoons of flour

What to do:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Take the pie pan (9-inch) with the prepared crust and fill it with the cut apple pieces.
  3. Combine the salt, melted butter, cornstarch, ground cinnamon, sugar, and 1/3 cup of light corn syrup and pour over the apples.
  4. Cover the pie with the top crust and cut several small slits in the top for ventilation.
  5. Bake the pie for 30 - 35 minutes.
  6. While the pie is baking, combine the 1/2 cup brown sugar, 3 tablespoons of corn syrup, flour, and the softened butter.
  7. Remove the pie and spread this mixture over the top crust.
  8. Bake the pie for another 10 minutes until the topping is bubbling.

Tip:

When serving the pie, add a plop of whipped topping, a side of ice cream, or (very Yankee) grated cheddar cheese.
